Vegetable Pasta Bake

This is one of my favorite easy dinners I make for my family.  My friendly neighbour hood meat eaters just cook up some ground beef and add it their portion after.

I have made some tweaks since I first started making this with some healthier more whole food ingredients.

These days I am using banza pasta as often as I can. It is chickpea pasta has 4 ingredients more protein and fiber then regular pasta and less net carbs.  In Canada you can find this at the Bulk Barn, for the Americans you find this pretty much anywhere.

I also started using this organic pasta sauce from Costco because there is no sugar added to it and well organic right?

Fist step is to cook your pasta. This stuff takes about 8-9 minutes.

I use whatever vegetables I have on hand but usually are similar to what you see here. You can use whatever your family enjoys, just dice them and saute them.

These days I have been using light cheese to get more bang for my buck and I usually use a mix of mozzarella and cheddar.

Mix all your ingredients together including about 100g of your cheese and spread it out into a dish.

Top your Pasta bake with the rest of the cheese and pop it in the oven at 350 for about 25 minutes.

Instructions
  1. Put water on to boil and cook pasta for 8-9 minutes.
  2. Meanwhile dice zucchini, onion, yellow pepper. Slice mushrooms and spinach leaves.
  3. Saute diced vegetables using non-stick pan.
  4. Once pasta is cooked, drain and add to sauteed vegetables.
  5. Pour pasta sauce on top and stir to combine.
  6. Add about 100 grams of cheese to mixture and stir to combine.
  7. Pour mixture into 9.5x13.5 pan, even out mixture to fit the whole pan and top with remaining cheese.
  8. Bake at 350 degrees for 25 minutes until cheese is bubbling.
